No no no... do not use soap on that pasta machine :-) the soap residue will taint your pasta for a long long time... plus it might oxidize the parts that are probably mostly iron... just do as it says and brush it real well and if you still do not trust it pass pasta through it several times more and discard it... There is no need though...the little dust that could be left over will not harm you. Great poem! xoxoxo

Thanks, Mariss. This machine is called an "Atlas Marcato".
Since it has been sitting for 33 years, think I will clean it with some soapy water. Instructions in the booklet say"To clean the machine, you only have to dust it, after use, by means of a simple brush; NEVER wash it with water and washing-powders."

I admire a chef that will go to those lengths. It would seem that good stainless steel should bear washing. It's Barilla for me!!!

I would have given it a good wash in soapy water and then dried it thoroughly and then rejected the first couple of passes. Saying that I like stainless steel if it is not a poor quality that rusts. I look forward to your poems because you are a good sport. Man cannot live on pasta alone.

I did not know that bit about Italy, but do love to make my own pasta...Ravioli, linguini and lasagna noodles are my favorite.
