That sounds like a good substitute to me! I'm not familiar with agave, but I believe syrup's sweetness comes naturally. I'm a big pancake fan too!

It's interesting how syrup impacts the taste of pancakes...I remember reading that a professional wrestler, Shane Douglass, had a family so poor that they could not afford syrup but in order to compensate for the taste used ketchup.

my mom used to make homemade syrup ....boiling water and sugar together...not quite the same either but it worked....we also would use jam or jelly
