Sounds deeply satisfying Pat, I used to love fried potatoes well bubble and squeak but it is not the same with Olive oil, no the old beef fat was the scrumpy finish. We had the foot and mouth disease in cattle for a while beef was taboo, although no one said anything about milk. Now we try to get Scottish beef, but it is very expensive.

I love a well-made potato salad, and yours (or Mom's) sounds great!I'm sure you'll have a great picnic. But, having been properly brain-washed by the health-food Nazis, I must confess that I always use Hellman's olive-oil based mayo...
