Uncle Ben's Rice was always better than Minute Rice. Minute Rice was for

college boys who didn't know better.

When rice is made to have it's own life and flavor and to stand alone, there is nothing better. My Irani brother-in-law makes rice to die for. Now he is old and uses a rice steamer and it just isn't the same.

He used to soak it over night and then put it in a pan with butter on the bottom and then placed a pyramid of rice into the pan, without water, placed a damp cloth over the pan with the cover on top and then low heat it until it was perfect, with tadig at the bottom for everyone to fight over.l

I think that's how it's spelled, tadig. Golden crunchy rice layer at the bottom of the pan.

Thanks for reading and for writing.
