TAPS! You mean to tell me you have never tried smoked salmon with rings of purple onion and slices of orange? Do, by all means! And it also works well with gravlax. And if you serve gravlax with a mixture of baby spinach and sliced strawberries, lightly moistened (not drenched) with a
slightly mustardy vinaigrette (olive oil, lemon juice, a
little bit of balsamic vinegar, a little Dijon mustard, whipped, p & s to taste), you've got a treat...

Sinome, this is not "Theedaiol Fish"! Actually, it's older than that, lol. But it's also not raw - rather, it's
cured, like smoked salmon, only it ain't
smoked! And it's perfectly safe - at least I've not died from it yet...

Wonderful! Everything sounds great except that I can't imagine oranges and strawberries with this. This is a good time. I have lots of fresh dill and white peppercorns. Don't have any Cognac but I'll bet I can find some in the grocery mart. What happens if you don't press it, but only turn it?

It sounds delicious... but what keeps it from spoiling? I got to tell you that my worse experience in a Japanese restaurant was once when I asked the waitress what was good and different, ( I was tired of old sashimi and rolls they had in the menue. ) She had a heavy Japanese accent and she said something like :"Theedaiol Fish is great: So I said fine bring it ... I ate it and went home. I have never been so sick in my whole life, I thought I was going to die. I went back to the restaurant so mad I was ready to kill someone. I had to shut up though, when the owner told me that I had eaten "three day old fish", a Japanese delicacy, but something you had to be used to because the toxins generated by the fish in those days could make you very sick. WELL I learned my lesson...so again...what keeps this Gravlax from spoiling? the alcohol maybe? ...Great post NAut loll .
