I've done transcribing. It's interesting work.
I've been thinking of putting an ad on the grocery store bulletin board about doing proofreading and editing, and thanks to you, Azur, if I advertise I'm adding transcribing to the list. And when you get your novel finished, I want to buy a copy.  :)pat

My mom still takes shorthand in her job (in combination with recording)
... it must be force of habit for her but I'm always amazed that she can read that scribble.  Just another lost art, replaced with technology.

I like the points you make. I think a great editor is essential as well.  sam

Re: I remember when I worked as a journalist for several newspapers and
Ariala. Email is my least preferred method because people mostly put across the party line. At least in the interview I can hear their tone, sense what questions pushes their button, or draw them out more, and get a rapport because the interview can go in unexpected directions. Transcripts are better for features I agree. I could never go back to shorthand and all that typing

I remember when I worked as a journalist for several newspapers and
magazines taping the interviews, too...A transcriber would have made my life soooo much easier!  Later, I started doing email interviews. These worked better for both me and the people I interviewed as they could think clearly about their answers and I had better quotes that made sense...Of course, such interviews are best for features, not news, in my humble opinion.
