Hi Naut!
I have a plastic "meat" board, because it can go in the dishwasher, to make sure all the germs and "goo" are washed off! But for everything else, my wooden board is my best friend, for all the reasons you listed, and because there's just something very satisfying about the feel of a heavy wooden board.

Great post! Amen to everything, with one exception: I use a heavy wooden cutting board exclusively, since wood has some antiseptic properties missing from plastic. And you don't need to be overly fussy with cleaning it,
except when you have cut chicken on it, in which case it needs to be washed thoroughy, because of the salmonella threat...
