Yeah, I spent most of my summers exploring the eastern provinces. I have family in Nova Scotia, New Brunswick, PEI, and since I married a Newfie, I've got in-laws in Newfoundland! I plan on retiring there, as soon as humanly possible - their lifestyle is so much calmer than these westerners, I can't wait till I can officially call it home!
Measuring is for sissies! Just remember, one cup is equal to a good sized handful - that's how I measure almost all my dry ingredients! I use a cup for the wet stuff, of course, or things would get messy real fast!

Your observation that baking in Calgary requires adjustments for the difference in height is very interesting! I wouldn't have thought of that, but it makes perfect sense. Mind you, while I love to cook, I hate the very thought of baking, and have never done it! All that damn measuring...
