Chicken feet

I had these in Hong Kong.  They were....good!  It is a regular at Yam cha or dim sum, pigeon also, which I ate but don't remember, must not have been that great.  I think the Chinese eat every single part of the pig, from head to toe except maybe it's teeth, which I don't suppose would be edible.  I wandered around a wet market in Macao once and there were among the usual pigs and chickens, snakes, frogs then....rats, huge ones, like do they eat those???

Here in Japan entrails of pigs and cows are eaten all stewed up tender-like, or fried on a grill and dipped in sauce.  I had raw horse meat which is a delicacy in Nagano, it sounds gross but I didn't see the difference in it and raw beef, which is also a delicacy.  (very thinly sliced and dipped in sauce with ginger and garlic)  They eat alot of different stuff 'round here.  fermented beans, and salt pickled fishy stuff, and all kinds of seaweed.  I like it all. There really isn't anything I don't eat, I never knock it until I try it but I don't think I could eat insects without being sick, which is the part of some peoples diets in the world somewhere, I just couldn't!

Calf Fries are the testicle cut from male cattle (they are bulls before the cutting and steers after). Ranchers will cut the testicles from their cattle because it makes a more tender beef when they take them to market.

Anyway, in our parts, calf fries are a big deal (pardon the pun). You put them in a buttermilk mixture then in batter, then fry them. I love them. They have also been called mountain oysters.

stuff..like deep fried pig brains (or maybe they were hog; same difference, I guess) when I was a little kid who hadn't learned to be a picky eater yet.

Well, I've eaten fried spicy eel, herbal pangolin soup, curry bat, barbecue rabbit, fried baby hornet.... just to name a few.
