One thing, this American is not proud of his country about - is the fact that it costs more to eat (buy) healthy foods. But you (and I) still need to try - and your mom - and my mom!

It's some sort of laziness or cooking phobia. lol.
It's one of the things that made my childhood very difficult.

I do as much cooking in the microwave as I can.  I'm a little leary about cooking meat in the microwave though, unless it's pre-cooked.  I don't know why that is.  Bacon in the microwave is ok. lol.

You're right, it does make it harder.  But it doesn't seem so bad.  I'm a big "spice" person...so going without much salt doesn't bother me much.
But like you said....those canned soups and such, are full of it.

Oh it's so easy to cook in today's world luv. I buy a lot of frozen food like at M&M's frozen chicken, frozen veggies, and in 20 minutes you can microwave a pretty decent meal luv. I do lasagna in the MW too. Try it luv, you'll like it.

That cooking thing- is a problem -I am on a low-salt diet so that
means fresh foods, fish, chicken, potatoes, cabbage, etc.  And of course, a lot of fruit, esp bananas.   Not too bad but it does mean weekly shopping, which I didn't do when I could just open a can of something and made do.
