You must be so proud of this work.  When I worked as a tutor my favorite student's were ESL.  Granted they had a good grasp of the language already but they needed to learn to use it properly.  They were always my most willing students.

 a 'spring chicken' is a very young chicken- 2 to 10 months old, with tender meat!
