Someone once explained to me the difference
between prejudice and racism. Both are "us" vs "them" thinking. Prejudice is when you hate or fear someone because of their race, creed or class. Racism is when you have the power to enforce your prejudice -- by denying someone equal opportunity, keeping them down economically or by taking advantage of them in some way.
Negative jokes or comments that discount or put "them" down reinforce prejudice and are, I believe, equally detrimental to "us."
