Boudin is a blend of rice, pork, and spices injected into
a casing, looks like sausage. It is pretty much a necessity if you live in Louisiana. You have to eat it or they run you out of the state. I miss it living in Texas although we can get it in San Antonio. It's just not that good fresh Louisiana product.
