I have had some of the same symptoms as you mentioned:
mood swings, eczema, depression, mental fatigue and stress. I used to get very irritable very easily. I am still dealing with it, but I do remember eating a lot more than I should have only because my energy level was low. I have always been at a constant weight even though I ate like crazy. I try to drink as much water as possible, but it is difficult at times. I can't seem to get rid of my problem that easily. I have been going to a doctor who practices natural medicine and he has helped me a great deal, changing my diet and learning to destress.

You are so right, and we need to get more and more people saying it. Then maybe they will stop pumping everything we eat full of sugar. I'm always glad to find another low-carb adherent!
Hey folks....do you know that your Thanksgiving Turkey is shot full of sugar? Sure, they call it "dextrose solution" but dextrose is nothing more nor less than SUGAR. Surprise!

Low carb diets are, without a doubt, the most effective way to lose weight (as you yourself found). Your body has to use your fat stores for energy because you're cutting off it's primary source by reducing the carbs. It's a very overlooked diet for some reason. I think people tend to see fat as the be all and end all of being overweight.
I realise I'm probably telling you something that you already know. Sorry.
