You had to bring up the Hominy Question!
The answer to yours is that they remove the cellulose wall, and the weight it constitutes in the total weight of corn. Cellulose is a carb, but since you can't digest it, they don't count it.
Unless you're a termite.
But the real question is....
"Hominy roads must a man walk down......."
(You had to ask, didn't you!).

Not Sure
I heard on TV that corn products were made to fatten hogs and have no nutritional value. How the configuration differs, I do not know.? I like the regular ones, yet when I eat any form of corn, I have flash backs! It further stated that diabetes run in certain groups that consume lots of corn products???
