That's a great idea! I may have to try your 'buttermilk.' I have often used yogurt as a sub for actual sourdough starter. It's like an instant sourdough.

I like nutmeg in some places--like plain cake donuts, or in french toast batter. Did you know you can overdose on it? But you have to really, really try. 

Cinnamon, I've read, is helpful with blood-sugar balance.

Good morning

Substituting lettuce for bread is smart. my biggest substitute is making my own buttermilk by simply adding vinegar to half and half. I use it to marinate chicken and pork chops.

Usually substituting nutmeg with cinnamon.
