The eye, see refers to the heavenly, elevated mental third eye of all knowing, spiritual eyes, and unlike the natural figurative first person " I ". Thank for your reference poem

I agree with a lot of this
even though I am not religious... Santa Claus (patron saint of shiny tat for materially obsessed consumers) and the attitude he represents can easily replace the soft candle light of religious devotion or warm firelight of connection with family and friends with the harsh neon glare of greed.

but I am a little confused about why you chose "Eye See" in your refrain instead of "I see".

Following your theme, I thought you might like what is my favorite Christmas/Epiphany story, "The Gift of the Magi" by O. Henry.
