Pat, when we go to the cheese factory we always buy a variety of cheeses. There are so many different ones to choose from. I've read that you can freeze cheese but I've not tried it up to this point.

I drove through Tillamook when I was a teenager during a family trip to Astoria. The Oregon coast is really beautiful.

While on vacation in Oregon years ago our family toured a
cheese factory, (Tillamook) in one of those towns along the coast. In the last few years I've found their cheese and ice cream at our local supermarket here in the Midwest - I especially like their farmstyle thick-cut slices of white cheddar.
