Avocado is another favorite of mine. I always have fresh guacamole, and I add avocado to my BLTs, as well as a slice of thin deli turkey with some mayo.

Egg salad is a favorite of mine too. I also love Deviled eggs, and when I make potato salad, there is no shortage of eggs in that mix as well.

Hope the red patch on your arm has gone away by now & you are feeling better after the quick yet interesting sandwich you fixed for yourself.I am a vegetarian and our Indian food is very different 😊

I liked it a lot, but it lacks eye appeal! Flavor-wise, it’s a winner to me. Hope the meds let you feel better.

Not lunch but I had fish and a few chips baked in the oven. The fish I just cooked in a pan for 3 minutes or less. I didn't eat all the chips but they were in my freezer and now they will be gone. I too am trying to eat healthy. That avocado dip sounds divine
