Well I hope you can find something lucrative. .  Well I don't know about the cauliflower. I'll tell you a little tale. Once when I grew veggies for sale it was very wet, slug pellets could not keep the little demons down. So I had to dunk the caulies in buckets of water a bit of salt would have helped but organic growers have to go by the book. You could try coating it with toffee.

What a nice experience! And I also like your lunch idea - maybe I'll try something like it for supper (I usually don't spend much time on lunch.) And you can send some of your lovely pre-spring weather this way - we're in the grip of WINTER...
