Where I used to work, we would get 3 weeks vacation, but were asked never to take all three at once. Two weeks in a row was the most they would allow. But like you, I never felt comfortable taking the two weeks in a row, so I always broke them up! It was nice as the year wound down knowing I still had vacation days coming . . .

FSI..that's great that you can take a third week of vacation...
I'm sure you all must work your butts off in the snowy-slushy time, so why not get in a third week? Some people have to beg to get in one week. Rest and relax, take a day trip, just enjoy whatever you do..
