Canning can be a lot of work, but well worth it. I just found my food dryer and hope to do some drying. I am also just enjoying the fresh vegetables straight from our garden and others'.

You are such a worker, and so creative. I've never canned a potato in my life--never even thought about doing it. LOL I've made lots and lots of different kinds of pickles.
