My father was the family bread maker.

He would start his loaves after work, letting them rise a few times and then bake them. They would be ready at one a.m. or two a.m. and he would wake his six sleeping children, butter the hot slices and we would eat sleepily, the best bread in the world.

The loaves for the next day were never as good as that one a.m. bread. What a lovely way to remember my father, now gone.

You might research breadmachines on the internet....esp look for info on the art of using whatever brand you have.  I have a fairly modern one--a sunbeam bought at walmart 2 Christmas' ago....It is fairly foolproof re the bread cooking without 'sogginess' but the trick with it is to adjust recipes to get the flavor right.....It is also fun to use the dough cycle....If you have a dough cycle you could use it to get the bread ready for the oven, then probably would only take 30 min in the oven to bake it....
