mmm... love duck in just about any form...
I've also had that 'oh, it's the giblets!' moment with a fowl or two...
I like to baste with a sauce of orange juice concentrate, mixed with soy sauce, garlic and sometimes other spices like ginger or curry. And do a rice stuffing with dried fruit bits and herbs...
Yours sounds delicious, I will have to give it a try!
