Wow, Mikes_Goddess.  I finally got back to you and I find a whole treasure trove of eggplant dishes.  Did you know that eggplant is very good for keeping your bad cholesterol down and your good cholesterol where it is supposed to be?   My extent of cooking it though has always been babaganoosh and eggplant parmesan.  Now I have a whole lot of them to try.  Thank you very much.

It is sort of soft on the inside and chewy on the outside and depending on how it is seasoned its a little salty. It has a meaty feeling in your mouth... almost like eating very soft beef.
