I would be upfront
If offered one job before another, I'd let them know that another agency is interested and you are waiting to hear from them. They will appreciate your honesty and at the same time they will feel as if they've made the right decision because you are "in demand". Good luck!

I can appreciate your concern. I think if I were offered a job I would accept it. If I were offered both within a short time frame I would carefully evaluate and take the one that enhances my talents to the maximum. Just be yourself and I am convinced you will know what decision to make at the proper time. Just concentrate on doing the best job you can at the interviews! sam

Sarah, CALM DOWN! Employers don't normally conduct such searches unless they have a specific reason for doing so, such as a criminal background check. And even if they choose to do a search, it's nothing to worry over unless you've demeaned their company or a specific person or group of people in some way.
As for what to do, I'd suggest taking the job you're most comfortable with. Keep us posted...
