Strat - alas...just back from lunch and instead of fish and chips, bacon
cheeseburger or menudo, I had a falafal sandwich. Gotta love middle eastern cuisine on occasion.

I make it for Son now and then, only I use pork meat instead of tripe.   His wife learned to cook from her Mexican grandmother and he really liked her cooking.

It must be pretty good. WHen I was in the Navy hispanic sailors would bring a canned version of it on the ship to accentuate the fine Navy chow (which I was in charge of for a few months).

Have you ever tried menudo?  There's something to be said for cow-stomach stew laced with lots of hot peppers.  (I've not tried it myself but I have known those who do)
