Hi Bunny! Long time no hear from, eh?

Hi, what's up with you these days? I've been working hurricanes and am just now headed home from Puerto Rico (hurricane Jeanne hit there). Looking forward to catching up on everyone next week.

On the pot roast thing--that about the easiest thing on the planet to make. Buy a roast, rinse it, pat it dry, rub with salt and pepper. You can cook it many different ways. You probably aren't cooking yours long enough or at low enough temps.

  1. On top of the range=2 Tbl of vegetable oil in a 5 qt bean pot. Get oil hot. Lay roast in. Sear on both sides. Then add about 4-5 cups of water. When water comes to a boil, turn fire down to low and put a lid on the pot. Cook slowly for 2 or 3 hrs. You can add onions or garlic during last hr of cooking.
  2. In the oven=Lay roast in a glass or metal pan 2 inches deep and wide/long enough so that there are several inches between roast and edge of pan. Cover with water. Carefully place roast on top rack of oven. Cook at 300 degrees for 2 or 3 hrs depending on size of roast. You can add veggies and onions during last 45 min of cooking time.
  3. Crock pot=Place roast in pot. Add 4 or 5 cups of water. Cook all day on low temp. Add veggies during last hour of cooking.
