there's been some information that has come across the airwaves (History Channel, etc.) lately that has helped to clarify some of these things.

One man, Eusebius, I think, chose what went into our New Testament.  Another man constructed the Nicene Creed.  Another decreed that all documents other than what was canonized were heresy and must be destroyed.

How can we say we are left with "God's Word" when men decided what to put there and how it was arranged?

We can pick the gems out, though and understand that the rest is "but commentary", as the Jewish Talmud puts it.
