Oh, baked potatoes sound so good!

The Mississippi River at Alton, IL just a bit northeast and across the river from St. Louis, MO, used to freeze all the way across a hundred years ago. But, in recent years the ice does not freeze deep enough to support much weight. Seems pretty stupid for people to drive out on the lake, but I'm glad they were rescued.

I hadd seen that article in the news, for the people stranded. Lesson learned, I believe. Like you, I enjoy the cooking but the cleaning up not so much.

Re: Good afternoon

Sassy, I'm so thankful they were rescued too.  Just the thought of what could have happened is so bad.  I oil my baked potatoes too and then bake them.  They turn out so good.  We eat the skins too!  We love them.  Pizza does sound good and I hope you enjoy it.  Thank goodness John is on the mend.  He's come so far in just a matter of weeks.

Re:

FSI, I'm so thankful they were able to help the people that were stranded.  It really could have ended very badly.

Good afternoon

Thank goodness for the Coast Guard. I am so glad that they were rescued. It is warm here today and the snow is melting. I am thankful for that because John has to make it to PT today. As for your baked potatoes...we love them! I buy the really large baking potatoes, oil them with olive oil and seasoned salt. I bake them at 400 for almost an hour and add broccoli with gooey cheese for John and bacon, gooey cheese, and sour cream on mine. We eat the skins and all. I realize that it is Monday, but we are both craving a stuffed crust pizza, so pizza it is after John finishes his PT today.

I'm glad there was a happy ending to the people getting stranded on Lake Erie. That could've been very awful, indeed.
