Like the tomatoes and other heirloom breeds, they are not the industrially-produced chickens that are prone to diseases--just now read about 'white striping' that causes factory chickens to have less protein and LOTS more fat! Heirloom chickens are the breeds that have not been genetically manipulated for fast growth and fast profit. They are also the ones that lay blue and green eggs! The ones I've been getting are pasture-raised, are bigger and tastier.

Good afternoon

That is one great recipe. Yum! I love roasting chicken over potatoes. It is such a satisfying meal. I have been using Tarragon a lot more lately. It is perfect with chicken. I also love rosemary with potatoes.
