I have never tried an ostrich egg, my experience includes chicken, duck, turkey, and now quail. Quail eggs are small, about the size of jumbo olives. And all of them taste pretty much like... eggs! Any subtle differences would be lost in making them deviled or salad. My mom used to use curry on eggs quite a lot.
I like eggs not only because they are rich in nutrients, but also because they can be sourced from ethical production. I like to get eggs from backyard chicken raisers. I may go more vegetarian in my diet, but probably never vegan.

I am a fan of curry, turmeric, ginger, and mole based Mexican cuisine.
Duck, quail, and ostrich eggs are a turn off to me due to their size. Anything past the traditional chicken eggs just does not fly with me.

I'm such a plain cook. I've never cooked with anything exotic. I do like your idea of French Onion soup for a base. Thanks for the tip. The eggs you boiled sound good. I love the egg whites from regular eggs.

I used to travel a couple of suburbs from where I lived in Sydney to a Chinese area that had authentic from China easy to cook...well just about anything you wanted. These days I mainly go for quick and easy because it is just for me.
