I like shark when it is prepared very fresh. It is dense like red meat, not like fish. We know a place that serves swordfish in season, and when cooked just right, it is delicate and delicious!

I would eat, or rather, try - rattlesnake and alligator. I've eaten ostrich, frog, bison, shark, but other than that, I'm a pretty picky eater. Not really adventurous with food.
