If you try eating the leaves, make sure you pick the young and tender.  The bigger they get the more bitter they become.

I think as a tea they would be lovely and what I enjoy is that they are the nectar for the first crop of bumble bees here where we live.

When we were kids we used to collect the heads for an old lady she dried them and made wine. I have drunk it on occasion also cowslip and elderberry, and potato. Of course we did not worry about the vinegar flies which floated on top of the tradition red pan ,sometimes covered with something suspiciously like an old vest.

Dandelions are so beautiful. I never get tired of looking at them. I have heard of dandelion whine but am not sure how good it tastes.

As the first blossoms in spring, dandelions are vital to the early

bees, esp. bumblebees - there's nothing much else making pollen for them to eat.
