It stores on shelves. Freeze-drying removes all the moisture, and they are sealed up in mylar bags. It is super lightweight and keeps for years! Best kind of emergency food!  We are going to try string beans and brussel sprouts, carrots, maybe some other vegies to see if they make good snacks without reconstituting with water.

I think I'll just go eat some dried prunes that I bought at the grocery store.

Once the machine is set up it is much simpler than canning, and because all water and oxygen are removed, there is no chance for bacterial contamination. It reconstitutes quickly with water, and is as tasty and nutritious as the day it was processed. They claim it has a shelf life of 25 years.  

The first batch has now been in 13+ hours...

Wow, that sounds a bit complicated, but probably no more so

than the canning process.  Hope it all comes out perfectly edible...
