I worked night shift for eight years in a row, so I can really relate to this. I still have trouble sleeping at night after all this time.

I could sooo do this! I think my husband could too. Its the kids that ar the issue. Im thankful thought that they are pretty much on the healthy eating side. They just seem to want more then I do.

could prep a week's worth on day off....then just throw in crockpot on a daily basis
I also cook lasagna and then freeze it

the crock pot idea sounds like a great one.
I must say that I live very healthy on a balck coffee, a fruit smoothie, and one small meal, plus plenty of fresh cool water.

I know it's difficult but maybe when you get a bit more settled into your routine, you could do "batch cooking." i have done that, as well as friends on various shift duties. Basically it's cooking several different meals at once, say, roasting chicken, doing a crock pot dish, and a few other main courses, pasta, even soups. Then freezing them in portions. That way, whatever one is in the mood to eat is handy. Problem is it takes a good part of one's day off, and there is clean-up. But well worth it.
