Thanks for reminding me.  I've read about this before and always intended to do it but never have.  Right now I have a half of a really good lemon sitting on my counter just waiting to be frozen.

Mother taught me never to waste lemon peel and I never have. always used it in another cake or sin a cup of tea or something.

I was unaware of the value behind a lemon peel. Unfortunately, I do not like to eat lemons. I do like fresh squeezed lemonade, though.

Love this post. Just try for organic lemons here. We were just discussing this today. Thank you! I like lemon juice squeezed into water and then I add mint leaves and ice. It has an almost sweet flavor, very refreshing in summer.
