I dont think I have ever had hollandaise sauce so I wouldnt know the difference either

Welcome to the club! As someone who likes to mess around in the kitchen (with an emphasis on the 'messing' part, LOL) I've tried to make hollandaise on several occasions, with varying success, ranging from 'Yikes!' to barely acceptable. But all this talk of Eggs Benedict has me thinking that one of these Sundays I'll say 'to hell with the diet', go for brunch at one of my favourite restaurants and indulge! And you know of course that a glass of champers goes very well with it...

I know a couple of great restaurants in Sydney where they make

wonderful eggs Benedict... not much help am I......LOL
