Wait a minute...
I thought
the ingredient to remember was okra - that it wasn't gumbo without okra. I had also heard that gumbo was actually one of those dishes where someone was trying to empty the fridge of leftovers - that you didn't have to have anything in particular (other than the okra) in it.
