It is good with Venison I use it for all sorts of things. Venison sausages are the best. I often use a bit more cummimin or fennel seeds if the taste is stronger than I want. Actually I blend fennel seeds and rosemary in my spice grinder just to use for these sorts of things.

I'm glad you said the recipe could be used with venisom because I have never had elk and probably never will have since I never see it in the stores. Every year though, I end up with venison chunks.
