This is bananas! Some varieties are not represented! I know them by their patois/trini names. There is MOKO which must be fried before eaten. There is MATA BURO....purple...must be boiled or fried. There is LACATAN...resembles gros michele but not as flavorful. Chiquito....very small fruits... dozens to a bunch....very tasty when ripe.... tastier if boiled and fried with onions. There is cooking fig....young figs used in broths and soups. Then there is sikiyea....silky sweet when ripe! There is another kind of 'fig' which grows in the the center of a whorl of cacti-type leaves....called ping-wing. Ripe it tastes great. Green it cuts your tongue with acidity! Caribbean people call bananas... figs. Enough said!
