Highway 61 Revisited. This is the quintessential Bob Dylan, where he established his reputation. Any Dylan Album is good, and you should look into his latest works that take from 30's, 40's and 50's Blues and Rhythm and Blues.
Blood on the Tracks is also good.

Great Post!
I'm really liking your blog! You have great opinions that are well shaped. Of course it's great to see someone who is into the same music I am as well lol. I never really listened to Bob Dylan before, but after reading your post I might want to check into his stuff. Is there a particular album that you recommend?
