Hmmm, green banana soup ... must try that. Thanks! Don't know what bananas these are, found them at an organic farm in Singapore.

Green bananas are great in soup. But they must be youngish! The Africans make fufu with green bananas. The variety shown in your picture are very tasty when ripe!

I don't buy them when they are THAT green
But I shop on Sunday and usually get to the last one on Friday. So unless I want mush on the last day I have to be them just before ripe.
