Lovely recipes for "tea" but the Tea that you missed is The Tea and as an Indian I cannot but point that out. Tea is made from tea bush leaves. What you mentioned are those of the European variety, something which has been in use before tea was brought to England.Deodar tree leaves have been use for centuries to combat fever. Some iother leave are good against headache. There are many herbs, as you rightly point out. But tea is tea and there is no substitute as such.

There are mainly two varieties - black and green. The best quality Tea is high grown, that is grown in hills high up. There must be constant rain fall but no stagnation of water. That is why it is called high grown. Darjeeling and Central Sri Lanka tea are considered the best for their aroma and taste.

Two leaves and a bud from a tea bush in high level plantation are is considered the top variety. They may be designated as Flower Orange Pekoe or Orange Pekoe. Tea leaves are bitter to start with. These must be processed and dried to make a good cuppa.

Wellknown poet Rabindranath Tagore even wrote a poem in honour of Tea.
