Cassandra, while I do not have a specific recipe for you.........
go to www.allrecipes.com and there is a spot to plug in whatever ingredient you are looking to use. These are recipes that are submitted by readers for readers and also include reviews.
I have also heard of www.recipebuddy.com , which also reacts to your ingredient submission.
That is the best I can do for you.

Banana bread?
Would that be just as unpopular? With nuts and perhaps raisins? If you find any use for them, you can freeze the banana pulp, either in the peel or squeezed into a container.
Would they eat banana chips? Slice them before they get overripe and dry in a barely warm oven or food dehydrator. You can also whip them into smoothies, but I would think the riper they are, the stronger the taste might be.
I saw a woman use the peels to polish dark shoes on a cleaning show last week. Wonder if the residue would get icky after a while, but she seemed to think it was a great idea. Good luck!
