Except for the weather, I think the sea and the mountains come next. Living in Toronto can really make you miss the mountains. It was so flat over there. I love going to the mountains in the winter and the islands in the summer. There is something timeless about the summers on the beach. I think that feeling has been the driving inspiration for all my writing...

Hi Tapsel-T...
I suppose your friend is trying to make olives in brine. What I do is make a small insision in each one and then keep them in plain water for about 15 days. The water must be changed every day. After the 10th day, your friend should try one or two a day to see if they are still bitter. I like them a bit bitter, but that's up to personal taste. When they are at the desired bitterness level, then I put them in brine, along with some lemon skin, oregano and thyme. I make the brine extra salty so they will keep for up to a year. I make a fairly large container, so when I want olives for the table, I take some out and wash them with water, and if they are too salty I keep them in a bowl with water for an hour or so. After that, I rinse them again and put them in a jar that is filled with olive oil, a bit of vinegar, thyme and oregano. In fact I have a few jars with various spices in them. Madras curry is great too! I hope this helps a bit!

void-is, Do you have a special way that you process your olives?
My friend in Phoenix has olive trees and has tried several recipes and has not really been satisfied with any of them. He is sending me a batch of his latest effort but is afraid that I will be disappointed with them because he is.
