Yum!
Haven't heard of spelt flour before - will give this a try soon... Blueberry pancakes here I come....

trinka - its easy! If you can locate spelt flour...
To one cup of spelt four add 1tsp salt, one egg and enough milk to make the mixture look right (depending on if you want thick or thin pancakes). I always put a bit less milk in and let it all sit for about half an hour. Then I melt about 1/2 tbsp of butter or margarine and add to the mixture with the rest of the milk until its all mixed up. This makes about 8 good sized pancakes. To increase the mixture just add eggs in ratio to flour. My boys like to add sugar to the mixture, but I figure they put enough sweet stuff on top of the cooked pancakes!

I would love that recipe!
I love pancakes of all kinds, but I am wheat sensitive. I would love a good recipe for spelt pancakes! yum!
