Sounds very yummy! I think what you call squash, we call pumpkin. I don't eat much of it, but I do like pumpkin soup. Thanks for the recipes.

Here we can find a variety of squash of every color and shape. I like to bake them (with a few fork stabs so they won't blow up) in the oven with some other main dish. We will eat half the squash just removing the seeds you can add a little butter if your diet allows. Refrigerate the other half and make squash soup for the next night: Saute half an onion and two cloves garlic in a pot, scoop the squash flesh into the pot with about two cups chicken stock. You can either add salt, pepper, cinnamon and a splash of cream. Takes a ten minutes to cook. Blend until smooth. This can be changed to add curry powder or fresh sage. or a drizzle on top of the bowl of pesto sauce.
