The soup kitchen is a great idea.
I should explain that he didn't serve with his fingers, just was seen picking at the carcass later. Ick. This year, I did notice some of the "carvers" wearing gloves. It's bizarre, but it's my place of employment.

Buffet style eating
is also something that I struggle with for the reason you mentioned: the guy picked the turkey off with his fingers. Ewwww! They should give the turkey carcasses to a soup kitchen for homeless people. That's what I would do. I'd even help make the soup. Take care
