Whew! Big Question from long ago times!
I think for the first couple hundred years we'd see a mixture of beliefs, each holding out as "the truth" of Christ. We would see even a smattering of Paganism mixed in with the Christian message. Early Christians, I think, would have been less adamant about theology and more interested in getting to know about Christ and his teachings.
In the early days, I think it was the stories about miracles, healings, and inclusiveness of all people that would have drawn followers. I would think the typical early Christian would have been more the "blue collar" ("blue robe"?) type than the academic or the upper class person. It would, I think, have looked to the leadership as a fad, another of many diverse religions springing up througout the known world.

When I try to
talk to my wife about this she looks at me as if I am some sort of conspiracy theorist.
